Last week my blog post showed me bagging up olives with salt and hanging them beneath my house. C has sent photos and an explanation of her method for preparing olives to eat. ‘Here are my experiments with olives I put in jars last month. On the left with rock salt, on the right with Himalayan salt… I shake them every few days and drain the water.’
She says ‘Worked really well with the rock salt last year’. I understand; if you have a system which works then you don’t change it. I look forward to sharing a tasting session with C in the future and comparing the results of the different processes.
