Friend R has been hard at work preserving her recent crop of cherry tomatoes. A couple of weeks ago R told me ‘I’ve just done some semi-dried tomatoes (our smaller variety, which were particularly successful this year).’ Cut in half and skin side down they were spread across the food dryer trays. ‘Dried for 11 hours, dipped in Apple cider vinegar, bottled in olive oil, and refrigerated. Yum!’ And judging by the photo they certainly look very appetising.
I have never tried to preserve tomatoes so R’s endeavour has inspired me – next year!
